Red Snapper is my favorite fish to eat. I devour it like Garfield, leaving just the bones and head. Although I don’t make it often, my go to way of preparing it is stuffed and baked. Caribbean style. This stuffed Red Snapper dish is delightful and bursting with flavor. You can stuff it with whatever vegetables you want, or even with other seafood- like crab and shrimp. I like my stuffed red snapper filled with okra, bell peppers and onion. It’s funny, I couldn’t stand okra when I was a kid. The slimy texture put me off. Now okra is one of my favorite vegetables. If you can’t find fresh okra or don’t feel like cutting it up, then frozen will do. I used frozen okra for this recipe.

Caribbean Style Stuffed Red Snapper Recipe

Back to the fish. You must season it with Green Seasoning for true Caribbean flavor. You can get bottled green seasoning. But it’s nothing like fresh. So I’d highly suggest that you make my Homemade Green Seasoning in advance of preparing this red snapper. I make large batches and store it in the freezer so that I always have some on hand, since I use it in everything. It’s that good. So good that the only other seasoning I used on this fish is Slap Ya Mama. Dassit. Slap Ya Mama is optional though. You may season with a combination of salt, black pepper, cayenne pepper and garlic for the same flavor profile. No harm, no foul.

Okra Stuffed Red Snapper

When seasoning the fish, don’t forget inside of the belly. This extra bit of seasoning will permeate the vegetables stuffed inside. You can also add some slashes to the body of the fish to allow the seasonings to penetrate better. I find that the fish still absorbs the flavor even without taking this extra step. Now let’s get to this stuffed red snapper recipe.

This Stuffed Red Snapper dish is delightful and bursting with flavor.


  • 1 whole red snapper fish, gutted & scaled

  • 1-2 bell peppers, sliced

  • 1 small onion, sliced

  • 1-2 cups okra, sliced

  • 2 tbsp olive oil

  • 1 tbsp green seasoning

  • 1/4 + 1/8 tsp Slap Ya Mama Seasoning

  • 1 tsp salt

  • 1 tsp lemon juice


  • Slice the peppers, onion and okra. Rinse well and set aside to drain.
  • Soak the red snapper in salt and lemon juice for 10-15 minutes to clean and retain moisture. Rinse thoroughly (including inside the belly) and pat dry.
  • Place the fish in a baking dish and rub down with 1 tbsp of olive oil.
  • Season the fish with 1/4 tsp of Slap Ya Mama and the Green Seasoning. Be sure to season inside the fish as well.
  • Place the vegetables in a large bowl and toss with 1 tbsp of olive oil and 1/8 tsp of Slap Ya Mama.
  • Stuff the red snapper with the seasoned vegetable medley. Place the leftover vegetables in the baking dish, surrounding the fish.
  • Cover the dish and bake for 30 minutes at 350 degrees.
  • Uncover the dish and bake for an additional 10 minutes until the skin crisps a little.
  • Serve hot. The fish can be split down the middle horizontally to serve two.


  • Frozen Okra can be used if fresh is not available
  • I highly suggest using my Homemade Green Seasoning for this recipe
  • Use a variety of bell peppers to make the dish more colorful. I used red and green.
  • Slap Ya Mama is optional. You may season with a combination of salt, black pepper, cayenne pepper and garlic for the same flavor profile.
